The best solution has always been protecting your game from updates and because we've been doing so since 2019 many of us have never encountered an issue due to Bethesda updating Skyrim Special Edition. There is absolutely no need to do so, especially for a new or relatively new mod user. And definitely ignore the comments you see in chat forums and user comments on mod pages suggesting you "roll-back" your game. I know there's much drama on-line regarding downgrading and the bottom line is it's simply drama. Updates don't break your game but poor mod management will and that starts with protecting your game. I feel it's always best to run the latest version when it comes to modding Skyrim and the fact that some of the new mods that have come out in the last year require the latest version, we will most likely see this trend continue. I do not recommend downgrading your game for various reasons but the fact is the vast majority of mods have been updated for the latest game version (1.6.640) and keep in mind that most never required an update in the first place, not to mention that if anything the latest version runs better than any of the previous versions of this game.
